Whiskey Blackberry Ginger Beer Cocktail

I found this recipe kind of by accident at Table + Teaspoon.  The photo really drew me in!  So, I made a few modifications and the rest is history.  The original recipe failed to instruct the drink maker to smash the blackberries.  Initially, I was puzzled that my drink didn’t have the berry color.  Andy gave me the little tip about smashing.  Once you start drinking this drink you tend to gloss over these sort of details.  That said, this drink is quite strong.  It’s also quite tasty – so, be careful.

This is the drink without the smashed blackberries…doesn’t make much sense, does it?

Also, if you’ve never purchased ginger beer you can get it at almost any grocery store or a place like Cost Plus World Market.  I actually bought the diet version on accident.  We tried this cocktail with diet and regular ginger beer (regular does not have even close to the amount of calories regular soda has – maybe 60?) and I didn’t taste a difference.  The diet ginger beer doesn’t have that fake sugary thing going on which is nice.

Ingredients:

2 shots whiskey

half-cup of ginger beer (diet or regular)

fresh mint sprigs for garnish

fresh blackberries (4-5 berries per drink)

a wedge of lime for garnish and wedge to squeeze into the drink

ice

Directions:

1.  Throw about 4 ice cubes in a glass

2.  Pour in the ginger beer and whiskey, stir.

3.  Toss in some berries and using the back of the spoon, carefully mash the berries into the side of your glass and then stir to get the pink color going.

4.  Squeeze a wedge worth of lime juice in the drink.

4.  Garnish with mint and a lime wedge!

Enjoy with care!  **Also, don’t plan on making dinner after drinking this cocktail or at least get all of your chopping done first.

Sunday Funday With Jill’s Summer Beer!

Pour yourself a cold one.

It’s been over 100 degrees here for days on end.  My air conditioner is broken.  No one can come for days.  What’s a girl to do?  Do what she already planned to do… Sunday Funday drinks and Tukten’s Fish Tacos with Andy!

Thanks to one of my co-workers, I have a few new summer drinks to try.  I named this one Jill’s Summer Beer.  I did make one modification – the addition of lime sherbet.  I never knew how good it was…until now.  Frankly, it makes any cold cocktail better.  Do yourself a favor, make Jill’s Summer Beer and enjoy the hot weather!

Ingredients:

– 12 oz. Limeade

– 8 oz. Vodka

– 4 Light Coronas

– 3 limes sliced

– 4 lemons sliced

– lime sherbet (one dollop per serving)

Directions:

Get a large pitcher or punch bowl and combine! Serve with ice and a dollop of lime sherbet on top of each serving!

Refreshing!
